Lentils and Spinach

On my last night in London, we ordered-in Indian food from a restaurant around the corner. While anxiously unpacking the large paper bag, I could smell the wonderful aroma of cumin and garlic. I was pleasantly surprised it was coming from a simple order of lentils and spinach! My friend Kristina passed on her recipe, and I must say, it's near perfection.
