Salmon with Lentils and Mustard-Herb Butter

While in Philadelphia, I dined at Amuse, a traditional, French bistro fare. I ordered their Saumon aux Lentilles (Salmon with Lentils), and would of licked the plate clean if I wasn't in a public place.

After I got home, I searched for a replica recipe so I could enjoy this dish on a regular basis. I found this one here and can't wait to recreate the food memory.
